Baobab Jam

Baobab Jam has a lovely sweet-apricot flavor and is a dinner party talking point when accompanying meat dishes, but can equally be spread thickly on warm toast for breakfast.   Don’t be alarmed when it starts out cloudy, it turns a clear orange when done.  Just remember to keep stirring as you make it as it can easily stick to the bottom of the pot in the early stages of cooking. We have given a recipe for just one jar, but if you double or triple it you can make more jars for your friends and family.

Ingredients
  

  • 1 cup Sugar
  • ½ cup Baobab Powder
  • 2 cups Water

Instructions
 

  • In a medium-sized pot mix the sugar and baobab powder with a little water at a time until all the water has been added.
  • Bring to the boil and then reduce temperature and let it simmer without stirring for 20 minutes or until it reaches setting point.
  • Let the baobab superfruit jam cool in the pot before pouring into sterilized bottles.

Notes

  • While the jam is boiling use a metal spoon to remove the white foam that develops on the surface.
  • If you are unsure if the jam has reached setting point place a tsp of jam on a cold plate, wait until it cools and feel if it is thick like jam.
  • To sterilize bottles, boil the bottles in water for 10 minutes.

Baobab comes as a fine powder with a sweetly sour, citrussy taste. The easiest way to use it is to add it to your smoothie, this way you get the best nutritional boost out of your baobab. Baobab powder is quite tantalising, especially when blitzed with berry juice and yogurt for a delicious berry fusion morning smoothie!

Ingredients
  

  • 2 tbsp Baobab Powder
  • 2 cups Berry Juice
  • ½ cup Yogurt Plain
  • ½ cup Fresh Berries

Instructions
 

  • Blend all ingredients together until smooth.
  • Pour into glass.
  • Garnish with fresh berries.

  • 2 cups Mango Juice
  • 1 cup Yogurt (Plain)

Ingredients
  

Smoothie Bowl

  • 4 Medium Fresh Mangoes
  • 1 cup Dates
  • 1 cup Almonds
  • 1 tin Coconut Milk
  • 3 tbsp Baobab Powder (BaoActive Pure Baobab Powder)
  • 1-2 tbsp Honey (to taste)
  • 1-2 cups Water (depending on thickness wanted)

Toppings

  • Berries (we used raspberries & strawberries)
  • Mango Slices
  • Coconut flakes
  • Granola (we like Earthshine’s Moringa & Baobab Granola)
  • Honey (we like Hi Honey Infusions)

Instructions
 

  • Put almonds and dates in a bowl and cover with water. Soak for 30 minutes to soften. (In a hurry, one can skip this step and enjoy the almonds and dates as small bits in the breakfast bowl.)
  • Drain almonds and dates and add to blender followed by the rest of the ingredients.
  • Blend until smooth
  • Pour into bowls
  • Decorate with toppings (get creative!), serve and enjoy!

  • 1/2 cup Orange Juice
  • 1 small finger Fresh Ginger
  • 1 handfull Fresh Pinapple Pieces

  • 2 tbsp Baobab Powder
  • 1/2 cup Coconut Water
  • 1/2 small Fresh Raw Beetroot
  • 1/2 small Fresh Carrot
  • 1/2 Apple
  • 1 handfull Mint

Vitality Powershot

  • 2 tbsp Baobab Powder
  • 1/2 cup Coconut Water
  • 1 handfull Kale
  • 1/2 Apple
  • 1 handfull Cucumber

Instructions
 

  • Peel and chop all the veg/fruit. 
  • Place in electric blender with water/juice
  • Add baobab powder
  • Blend until smooth and enjoy!
